Where Rebellion Meets Refinement

Our Story


Barrel Riot began as a creative experiment with a simple idea: what happens when you bring the worlds of fine wine and bold spirits together? That question sparked a journey of craftsmanship, curiosity, and a whole lot of barrel-aging.


Founded by winemaker and builder-at-heart Daniel Lipsky, Barrel Riot blends traditional winemaking with the unexpected. From Bourbon, Rum, and Tequila Barrel-Aged wines, every bottle reflects a willingness to push boundaries while honoring the craft.


In 2025, that vision expanded into our first tasting room in Rancho Bernardo.  This space was built to be warm, inviting, and centered around experience. Here, we pair our signature barrel-aged wines with tapas, flatbreads, and cheese boards.  We also offer select craft beers and traditional wines to create something more than a tasting… it’s a place to unwind, explore, and connect.


Whether you’re sipping with us at the bar, experiencing a wine flight, discovering your next favorite bottle, or enjoying a night out with friends, Barrel Riot is all about embracing the adventure in every pour.

How is the wine made?

At Barrel Riot, we focus on what we like to call the third and fourth quarter of winemaking.


Rather than owning vineyards or conducting our own harvest and crush, we collaborate with respected wineries that expertly grow, ferment, and age their wines. As these wines mature in barrel, there comes a moment when producers have a clear picture of their final volume. Often, that process reveals exceptional wine that exceeds their own production needs.


That’s when we’re invited in.


Before any wine is finished, we taste and evaluate it in its unfinished state, searching for varietals whose natural structure, spice, and aromatics might be elevated through aging in bourbon, rum, or tequila barrels. This is a delicate process. Not every wine benefits from spirit-barrel aging, in fact, many combinations can mute flavors rather than enhance them. We often refer to this as the “Long Island Iced Tea effect”: when too many bold elements collide, individual character disappears. That is precisely what we aim to avoid.


When we find a wine with the right foundation, we carefully remove it from its original production path and transfer it into one of our spirit barrels, where it ages for an additional three to six months. During this time, the wine absorbs subtle layers of spice, warmth, and complexity. Afterward, we blend, balance, and bottle each wine to achieve harmony and depth.


The transformation is dramatic. When compared to the original winery’s finished version, our wines are distinctly different, richer, bolder, and more expressive.


One analogy we often use is cooking. A perfectly prepared piece of chicken can be juicy and delicious on its own, but add a touch of salt and pepper, and suddenly new flavors emerge. Spirit-barrel aging does the same for wine. It draws out hidden dimensions, enhances spice and texture, and results in higher-alcohol wines that are meant to be savored rather than simply consumed.


These are sipping wines. Wines you feel on your lips, taste across your palate, and sense with a gentle warmth at the back of your throat. Much like fine spirits, they reward patience and attention.
